With Lemon Mustard Baked Tofu Planks. Served on crackers with a spot of Poupon mustard and topped with thin pieces of celery or green pepper. Served with a black pepper spray!!. We use the guava paste as a caviar and smooth squares. Both festive and good taste!!
Use a firm cracker. Here I used Town House by Keebler (contains no animal product).
Let’s make the tofu first: preheat oven to 400 degrees
2, 14 oz. hard vaccum-packed tofu, firm, rinsed and patted dry, then cut into 8 slabs each, crosswise from end to end
Poupon Mustard, lemon juice (I used bottled all natural fresh lemon juice by Perricone Farms), salt to taste – in small bowl mix portions to your tastes as a marinade to brush on the tofu – not too thin, not too thick
Line baking sheet with parchment paper or rub liberally with oil.
Place tofu planks equi-distant on baking sheet. Brush with lemon-mustard. Turn each over and brush the tops the same.
Although we’re not broiling here, we put the baking sheet on the top rung in the oven where the heat is high. Bake about 10 minutes. Remove from oven, turn planks over and bake another 10 minutes or longer,
- just be sure it doesn’t overbake which produces a plastic texture on the edges the same as when you fry an egg too hard and the whites get a plastic feel. Remove from oven, cool at room temperature and cut into about half a cracker size squares/rectangles.
Prep veggie toppers:
Slice or dice thin pieces of celery and green pepper that will fit the cracker; set aside
Prep the guava paste:
1 lb. 5 oz. can Guava Paste by GOYA
Cut out portions of the guava paste about 3/4 inch x the length of the tin = long sticks, then cut each guava stick from end to end in 1/8 inch thin rectangles/squares
Now remove another portion of the guava past, place on plate and mash with a fork, not till smooth, just till tiny lumps are formed, looking like caviar.
Now, let’s assemble:
1- On each cracker place a teaspoon of guava caviar.
2- Place a square of baked tofu (cool not hot) on top of the caviar.
3- Place on the tofu a square of guava.
4- Top the guava with a large dot of Poupon mustard.
5- Place on the mustard a thin piece of celery or green pepper.
6- Now pepper spray the entire platter.
7- Serve right away. You can prep the ingredients beforehand, but don’t assemble till you’re ready to eat. Okay?
