




Basically we’re looking at an olive paste with liquid added, from the jar and the tap. A little sweet, a little smoke, black pepper and processed with my ole standby, guar gum – makes a beautiful thick!
Makes about 3 cups
10 oz. jar sm. pimento stuffed green olives – I used Spanish Manzanilla – including liquid from jar
1/4 c. light brown sugar
1-3 t. liquid smoke; depending on the brand some are stronger than others
1 c. cold water
2 t. guar gum powder
lots of fresh fine grind black pepper
1- Place olives plus liquid from jar, brown sugar and liquid smoke in food processor and process till mealy.
2- Add water and process again, about 30 seconds with pauses.
3- Add guar gum, process immediately till thick, then go on about 30 seconds, pausing as needed.
4- Add black pepper, process again.
5- Let set 20 minutes or more to thicken further.
6- Re-blend till smooth, then pack in covered container. Refrigerate till cold, then use as needed.
7- Uses:
- Add to dips and dressings for an acrid olive taste.
- Use as a spread for crackers or toast squares or fresh bread squares brushed with olive oil first.
- Add a spot to melted cheese appetizer plates.
- Use as a condiment for subs, grilled cheese sandwiches, flour tortilla wraps or mini soft tacos.
- Use as a dipping sauce for A-F nuggets.
- Use as a topper for breaded or un-breaded A-F chicken breasts or other main dish A-F meats.
- Add to plain white sauces, marinara/tomato sauces, barbecue sauces to perk them up.
- Add a bit to any bowl of soup to add complexity and zing.






Top JUST EGG with Violife Cheddar Strips and a spoon of GREEN OLIVE CHIF, then microwave on a plate till hot; sprinkle with smoked paprika and dill weed.
If no cheese, top with G.O.C. and a spoon of A-F mayo, sprinkle with smoked paprika, then microwave till hot.
Top a cracker with G.O.C, then top with a miniature Dandie A-F marshmallow, plain, or sprinkle with smoked paprika or brown sugar or both.
Put a couple tablespoons CARROT SUBLIME on plate, top with A-F Cheddar Strips, top with G.O.C., microwave till soft and hot, then plate with crackers.
